This 2007 Cabernet Sauvignon offering from Clos du Val is deliciously complex with good balance.
The nose was strait forward with cherry and raspberry notes. The palate was full with cherry, strawberry jam, floral jasmine, blackberry, mellow sage and
faint dewy oak. Yes, there are many elements to discover in this fine wine. The finish was long with cherry, vanilla and oak. After the bottle had time to open, the nose expands with an additional musty oak scent that compliments the fruit. The palate remained the same, but the overall experience was greatly improved as the wine expressed much better structure and balance of tannin, acid and flavor. This is a very good wine that will benefit from a decanting before enjoying. Cheers!
