William Hill® Estate Winery: Cabernet Sauvignon 2006

Napa's climate is renowned for its long growing season marked by sunny, warm and dry days and followed by cool evenings. These growing conditions are ideal for allowing grapes to ripen slowly and evenly. These conditions along with the winemaker's skills yields a fantastic Cabernet Sauvignon.

Upon first opening, the nose was berry, cranberry, blackberry and currant with a bit of heat - high alcohol concentration. The palate was deliciously smooth, with currant, black cherry, blackberry, vanilla and oak. This medium-to-full-bodied Cab just oozes with dark fruit flavors, but these flavors aren't overpowering. The mouth fell is rich and full. The finish was long with blackberry and oak. As the bottle opened, the nose mellows from the "hot" element. The nose was blueberry, currant, blackberry, cherry and anise. The palate became amazingly smooth with excellent structure. The tannins felt stronger now, actually becoming an overall stronger element than the flavors. It's a good balance between tannins and palate. The palate was currant, black cherry, blackberry, vanilla and subtle oak - very rich. This wine will benefit from decanting. Cheers!
