Bonterra Vineyards: Cabernet Sauvignon 2008

In making Bonterra Cabernet Sauvignon, they like to add to the typical layers of flavor by blending in small amounts of other red varietals to add color, texture and a bit of spice.

The nose was of a moldy must character, with cherry. The palate was musty, cherry, pepper and prune. The finish brought cherry and vanilla with a fine tannin presence. Right out of the bottle this wine displayed good structure with medium to strong tannins. As the bottle opened, the nose bloomed to include blackberry, cherry, plum and a moldy must character. This mold element isn't a bad thing in any way, it displays the craftsmanship of oak barreling, and it is a nice balance to the sweet and spice notes throughout. The palate was musty, tangy cherry, pepper spice and vanilla. Now the wine displayed the deep, rich fruit qualities in an extremely smooth, structured delivery. The finish was cherry, vanilla and oak. This is fantastic bottle of wine. Cheers!
