Our Cellars: Hamilton-Steven's Pinot Noir 2008

Our Cellars: Hamilton-Steven's Pinot Noir 2008

This offering is a fairly complex wine that almost looses the plot with so many elements turning.

The nose was plum, cherry, spice and vanilla. The palate was cherry, eucalyptus, apricot-spice, and chili, like chili pepper! Wow, this chili element does contribute to an almost hot in the mouth feel that doesn't help the structure. But despite that, the overall impression is an aggressive Pinot that delivers an array of flavors at a reasonable cost. The finish was bitter chocolate. As th bottle opened, the overall palate is tangy and dry with the same flavors coming forth.

Mouthwatering cajun seared ahi tuna rests on a bed of greens and wasabi dressing.  Lightly toasted sesame seeds complete this masterpiece.

Marinated Pork Tenderloin
Marinated Pork Tenderloin
Like Filet mignon, this is a tender item. With marination and slow cooking, you'll find yourself cutting into the tenderloin and thinking it was butter. Delicious. And on top of that, you'll see it is one of the the leanest meats around. Enjoy!
