Trellis Vineyards: Chardonnay 2008

Trellis Vineyards: Chardonnay 2008

This offering from Trellis is a good find in my book. At $4.99, it delivered a subtle yet extremely smooth and well balanced glass of wine.

The bouquet of this wine was large with apple and pineapple dominating. The palate was subtle with apple, pineapple, guava and vanilla off the back. This is a medium-bodied wine that is super smooth and pleasant feel. The finish holds the vanilla just a bit with a delicious buttery element dominating. As the bottle opened, the only noticeable change came from the palate: up front a tart lemon element like lemon zest was introduced, and mid to end palate a rich cinnamon flavor shows. Again, I would consider this one a find, much better than average table wine at a table wine price! Cheers!

For this salmon recipe, the secret is in the sauce. Shallot and garlic in butter, with cream, dijon mustard and dill.
