This offering from Carard Sauvage is a surprise of a sweet and spicy palate that is sure to please.
The nose was spice, pepper, sage and cherry with a floral rose end. The palate was spicy-sweet with currant, apricot, pepper, cherry, maple syrup and cinnamon. Yes, there was a lot going on there! The finish was smooth and long, with musty-wood, cherry and faint oak notes.
As the bottle opened, the nose was similar. The palate moved to cherry, maple syrup and apricot moving forward, and then white pepper, cinnomon and lime zest showing. My day two tasting was spot on with good consistency. Cheers!
