Epicuro: Salice Salentino 2005

Epicuro: Salice Salentino 2005

This wine is made from a blend of Negro Amaro (80%) and Malvasia Nera (20%) grapes. This wine is very rich and dark in color, and comes out of the gates strong with flavor.

The nose revealed currant, strawberry and wet wood. The palate was cherry, spicy tangerine, fennel, vanilla and cedar. The finish was long and light with light plum and cherry. As the bottle opened, the nose remained the same. The overall palate tasted fairly similar, but the spice elements faded while the sweet elements dominated. That being said, this wine tends to fade overall a bit, but it isn't a Petite Sirah. Your expectations for this wine should be of a light to medium bodied wine that is very smooth with light tannins that all work well together. Cheers!

Marinated Pork Tenderloin
Marinated Pork Tenderloin
Like Filet mignon, this is a tender item. With marination and slow cooking, you'll find yourself cutting into the tenderloin and thinking it was butter. Delicious. And on top of that, you'll see it is one of the the leanest meats around. Enjoy!
