Roth Estate: Cabernet Sauvignon 2006

Roth Estate's Cabernet Sauvignon grapes are grow on hillside vineyards in Alexander Valley, which produce limited quantities of quality wine.

The nose was berry, eucalyptus, oak, mossy grass and coffee. The palate was of raspberry, blueberry, coffee, vanilla and oak. These first tastes were poured through an aerator, and were still a bit edgy and rough. This selection needs to be decanted, as well there is sediment present, so pouring into the decanter through a Wine Decanting Funnel or a Wine Filter is recommended as well. The finish was long and smooth with raspberry and coffee elements. As the bottle opened, the nose moved to raspberry, blueberry, coffee and musty earth. The palate improved to raspberry, blueberry, coffee, leather and a mineral chalk salty final note that beautifully balances the sweet elements. A clue to the potential mineral palate is evident on the cork: reflecting crystals are easily seen within the red wine stained area of the cork in the photo. Along with great structure, the palate flows quite smoothly. The finish changes from raspberry and coffee to raspberry with the minerally salt element. An absolute recommendation for pairing is the Lindt Touch of Sea Salt Dark Chocolate wafers - they compliment the mineral palate elements of the wine, as well as and contrast the sweet palate elements with it's dark, bitter chocolate.
