1 pound of 2" thick Filet Mignon
Course salt (sea salt)
1. Salt rub one side. For this recipe I am using Black Lava Sea Salt. Cut in half. Get coals hot so they are letting off flames.
2. Grill each side, that is top, bottom, and all four sides, for about 20 seconds each - enough to burn slightly.
3. Then move Filet Mignon pieces away from directly over the coals to opposite side of grill, cover grill, yet allowing air flow. Continue to grill for 20 - 25 minutes for medium rare. This time may vary depending upon your grill size and amount of coals used.
