F.J. Serra: Cabernet Sauvignon 2007

Named after Father Junipero Serra, one of California's first planters of vineyards, this Cabernet Sauvignon is a well rounded, delicious wine with many flavors within the palate.

The nose was of currant, eucalyptus and chocolate. The palate of current, a mossy mid palate, then a tangy last hit. Overall out of the bottle impression is of a Bordeaux in so much as it has a smooth flow in the mouth an a relatively light feel. There is lots of pucker to start, strong tannins show their strength, along with these strong flavors. The medium finish was nutty, like almonds and cocoa. As the bottle opens, the nose defines more and renders current, citrus, eucalyptus, chocolate and oak. The palate is now well-rounded, smooth, like a Bordeaux, but with more punch and body. Cheers!
