Fess Parker: Viognier 2005

Fess Parker: Viognier 2005

Fess Parker produces wines of great quality and value as they cultivate the growing region of Santa Barbara County. If you haven't tried many white wines, this offering is surprisingly full bodied and full of flavor.

The nose was light and airy of peach and spice. The palate was a delightful combination of cantaloupe, butter, peach and honeydew. The nose doesn't do the wine justice once you taste it. This medium to full bodied wine is rich and delicious with a great mid palate of melon and butter. The finish , light to medium in strength, was slightly mineral-chalky - a good contrast to all the sweet flavors that lead up to it. This wine is fantastically paired with soft shell crab and melted butter. Cheers!

For this salmon recipe, the secret is in the sauce. Shallot and garlic in butter, with cream, dijon mustard and dill.

This slow-cooked feast is well worth the lenghty cooking time. The Hawaiian Guava Wine from Volcano Winery really brings the flavors together.
