Santo Stefano: Cabernet Sauvignon 2007

Santo Stefano wine is crafted to produce fine yields. They use low-yield vine to produce mature grapes full of flavor. They continue by aging this particular vintage in French and American Oak barrels for 24 months. The result is a rich, structured wine.

The nose was of blackberry and a smoky burnt oak aromas. The palate was of blackberry, cherry and anise. This is a big wine - full bodied with large portions of fruit flavor, acid, tannin and alcohol. It can also be described as "chewy" - that is it feels thick in the mouth, with a lot going on, yet it finishes long and smoothly. To my palate, the finish was of smoky oak, then anise. For a pairing, I would suggest a balsamic vinaigrette salad or lamb marinated in a balsamic vinaigrette . Cheers!
