Seared Ahi Tuna Salad

Mouthwatering cajun seared ahi tuna rests on a bed of greens and wasabi dressing.  Lightly toasted sesame seeds complete this masterpiece.



Ingredients:

1 (6 ounce) ahi tuna steak,
2 teaspoons Cajun spice
1 teaspoon grill seasoning or kosher salt and fresh ground coarse pepper
Vegetable oil, for coating the grill pan
Half a bag, mixed baby salad greens
1 teaspoon sesame seeds
1/4 of a cucumber, thinly sliced
1/2 teaspoon wasabi paste
1 tablespoon rice vinegar
1 tablespoon soy sauce
3 tablespoons virgin olive oil

Directions:

On a plate, spread the combination of Cajun spice and grill seasoning or kosher salt and pepper. Coat your ahi steak by pressing the steak vigorously into the combination to ensure coating stays on. Heat a grill pan over high heat. Toss in the sesame seeds, and stir them constantly until they are golden brown. Take them out and set aside. Wipe pan with a thin layer of vegetable oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat. Combine greens and cucumber into a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Then whisk in the virgin olive oil. Drizzle dressing into bowl with your salad and cucumber, and toss. Place salad onto a plate. Cut tuna into 1/2" wide strips and place atop the salad. Finally, sprinkle the sesame seeds atop all.

There are 6 acres of Merlot grapes planted in Madonna's vineyard. Harvested at an average of 24° Brix, the grapes are crushed, and the must is fermented at 85° for 10 days with Pasteur Red yeast. After fermentation, the wine is pressed, racked once, and placed into small oak barrels for 16 - 18 months. Our Merlot has the aromas of raspberry, toasty oak, and green tea. It pairs well with lamb, prime rib, lasagna, roasted potatoes, and beef stew.
